Breast out the geese.
Slice off all that sinu crap.
Soak on very salty water for 4 hours
Rinse well
Seperate the muscle of the meat and slice thin (1/4")
Marinate 24 hours in Italian dressing.

Pan fry for FAJITA's.... Yeah
RARE only, don't over cook it
Use a Fajita spice you can buy at any grocery..

There awsome...

A buddy at the local bar does this for us every Weds..
as long as we keep the supply going...
