Here's one that I tried a couple of weekends ago.

Cut your goose breasts into strips about 1 inch wide strips and pound them flat. (it helps break up the muscle)

Place them overnight in a zip lock with a mixture of your favorite BBQ sauce and white wine. (the wine breaks down protein and tenderizes)

When ready to grill take out the strips and put a piece of pepper jack cheese on the strip and roll it up. wrap in bacon and skewer with a toothpick.

Put rolls on the grill and cook until done.

You can also put a jalapeno half in the roll with the pepper jack, if you like it a little hotter.

Make sure that you make plenty cause they don't last long!
