I am going hunting in Iowa this spring for snows. I'll be taking a few boxes of heavy shot and several boxes of steel in case we really get into them,
What shot size do you guys suggest for the hevi shot and for the steel. I shoot a Browning gold 10 Gauge

The guys here in missouri that shoot hundreds(yes, hundreds!) of SOBs every spring over decoys use BBs exclusively.
I use BBs for my first shot backed by BBBs. The BBBs actually pattern very well in my BPS with modified choke and I have really smoked a couple of 50 yard snows with the big shot.
I really would not argue with anything 2 and larger in steel. I hunt with a fella that shoots a 12 ga SBE and uses 3.5" in 2s for all shots and he can really whack em. Another guy I hunt with swears by no. 1s.
I guess my final thought is no smaller than 2 no larger than BBB but overall I would go with BBs.
