Here is another way we get rid of some goose and it's pretty good!

Take goose breast and slice it very thin against the grain. I find that if the breast is still partially frozen it works best. Soak in salt water for a few hours then rinse and dry. Dip in egg and seasoned bread crumbs then sear in a frying pan with oil. Then bake at 350 with sauce and cheese. It tastes very good and most people that have had it when I made it didn't know it was goose.
