Hey guys, just thought I'd let you know that I'm a professional chef and love to give cooking advise!

I always experiment with my game and try to find new ways to cook it. If you have any questions post up. I'll try my best to help you out. :D

Thanks for the offer! I have a lot of goose breast and would like to try something different. Be glad to hear any ideas you may have.

Thanks
Scott
How bout a stew or crockpot recipe I can have cooking while at work.
Check the other post for a way to make some killer fajitas. Throw some peppers, onions, cheese, and salsa with it and you won't be dissapointed.

As for crockpot/stew ideas.

My favorite is the old standby: BBQ Sandwiches! THere isn't a person around that will know they're not eating beef/pork if you don't tell them. Great for kids and finicky eaters.

Soak in saltwater overnight, rinse and dry (you should do this with any waterfowl you cook). Season with salt and pepper, Get a pan really hot, add some oil, and sear until well browned on both sides. Next throw the meat in the crock pot with enough liquid to cover it. Cook until the meat shreds(3 hours to all day). Then add a bottle of your favorite bbq and cook until the sauce thickens enough for your liking. I do this in a pan, not a crockpot, but it would work just as well. Some like to add hot chiles or onion to this, it all depends on preference.

I'll post more in a bit when I have a little more time.
HawkDog. I have been wanting to make peperoni sticks out of mine. I dont want to buy the seasonings from Cabelas or other places. Do you have any suggestions on how to do it.
