The simplist and best tasting dish for goose is extremely easy and takes no time at all,
1.Take the breast out of the goose(normally i only use one goose)(so 2 breasts)
2.cut the breats into tiny "inch" cubes
3. Get some sort of wild rice, get the rice almost fully cooked, while you have the goose goin in another pan
4.put them into one pan it finish cooking
Simple easy and quick and real good if done right

This gets all the gamey taste out of the meat? I've tried taking goose straight from the breast and cooking it in a pan with butter and let me tell you its not very good when compaired to wild duck.
