Preparing Wild Geese

Postby RdawsonJr » Sat Dec 12, 2009 7:03 pm

Hi the name is Ray Dawson and I'm new to the whole goose hunting thing, but we went today and had a very good day of hunting. Now I was just wondering after i have field dressed the geese( i took only the breast) how do i go about cleaning it and preparing it for cooking. I was told to soak it in water, and change the water every few days to get the blood out. Is this right or can i just cook it right up. i have a few recipes in mind, i wasn't sure how to prep them tho. please if you can get back to me, it would very much appreciated.

I have fixed them right away. I did some about a month ago on the grill. I defrosted it, then put it on the grill at 250 degrees, after 15 min. I turned it over and cooked another 15. I then wrapped bacon around it, completely covering all the breast. Cooked 15 min. turned it over for 15, then turned the heat up to around 350 and crisped up the bacon a little. AWESOME

I like to marinate mine in worchestershire sauce for about a day in the fridge. Makes the goose taste just like steak.

If they were frozen, I like to soak them in Pepsi or Coke for about 12 hours. I have no idea what the pop does, but it breaks down all the tough tissue. I also like to pound them a little flatter, usually with a beer bottle. I have found that when on the BBQ if not beat flat they take too long to cook in the middle. I treat them just like a steak, and only cook to med rare, any more and the suck..
