After the geese are clean and I soak mine 48 hrs if I'm not eating right away but before I freeze them I prepare them for what I have in mind for them some I cut in chunks for stew or kabobs or slice my jerky peices or strips for frying whatever the use may be then I vacume seal that way they are all ready to use when I get the craving
