here is an easy way to cook goose and its a joy to eat.. take bonless goose breast and cut into bite size pieces.. about a 1/4 to 1/2 in square.. about the size of beef stew meat.. then marinade those cuts in a mixtur of italian dressing and worchester sauce along with your favorite spices.. i make the mixture about half and half.. then after they have marinaded for 6hr. or more take a package of bacon and cut it in half. store bought bacon works for this or if you have your bacon custom cut then make sure they slice it thin.. take a piece of bacon lay it out put a chunk of goose on it and then put a small daliop of cream cheese and a slice of jalapeno pepper on it. then roll it up and skewer it on a bamboo skewer and grill for 2 minutes on a side and flip only once. dont over cook and then serve with your favorite sides.. enjoy..
you can say you shoot alot, doesnt mean your a good shot..

Cut goose breast into thin strips about 4-6 inches long. Marinade for at least 30 minutes with honey teriyaki marinade. Cut into slices of bacon third. Remove breast strips from marinade and skewer with sliced bacon. If you use pepper or onion dislocated alternate between breast and bacon for slices.Add gas grill and cook until bacon is crisp. Drizzle with barbecue sauce of choice for the last 5 minutes of cooking. Serve as an appetizer or meal.

Marenate mine in Manderin sause over night.( have actualy done it for 2 days sometimes). Started wrapping them in bacon when I first tried it out, but after having more goose than bacon once, I put the remaining kabobs on without. I no longer use the bacon. Fridays are game days for lunch at work. I'll bring in my little gas habatchi, and the guys and I will bring in different meats.Everyone wants the kabobs...even the city boys, whom I thought wouldn't eat any of the stuff!! We even brought in some crawfish one day. After seeing them in a 5 gallon bucket, a few of them rolled thier eyes. When we got them all cooked, it didn't take them long to try them out. Before we started "Game Day Fridays" they couldn't understand why we enjoyed a lot of the critters we hunt.....they do now!!
Love the thud, after the feathers fly!!!!

A good hunting partner doesn't complain when it's: too hot, too cold, too wet, too dry, too early, too late, but will razz you when you miss........Thats why I like my dog!!!!
