This recipe will do 3 lbs of meat.
Breast out or debone your geese

2 1/2 tbls tender quick
1 tbls brown sugar
1 1/2 tbls mustard seed
1/3 tbls black pepper
1 tbls papricka
1/2 tbls all spice
1/2 tbls garilc powder
1/2 tbls crushed bay leaf

mix together and apply to meat. This needs to marinate for 7 days and you need to turn it every day. After the 7 days put the meat into a cooking bag preheat oven to 350 and bake for 2 1/2 hours. Take out of oven and let cool. Slice the meat into slices and make sandwiches of put into a ziploc and head to the pit. I haven't found anyone yet including people who say they hate goose that did not like it.

Its like a seasoning salt. I'll check but, I think Morton makes it.
