Bacon wrapped goose

Best way I have ever had goose, bar none!

Take a goose breast remove all silver skin. Cut in half, then butterfly fo its half as thick. Soak that in a mixture of Orange juice, worchester sauce and a spash of Italian dressing. I usually use 1 cup OJ, 4-6 table spoons Worch, 2 tbspns Itlalian dressing. Marinate 4-6 hrs. Then take a piece of peppar jack cheese and a scallion, fold and then wrap bacon around it. Grill high heat and flip. Dont over cook it ! Its well worth the prep work, I guarantee it !!!

Delicous and easy to make when with hard chedder instead of pepperjack but the marinade is awesome gonna try ith with both deer and elk!!!!

going to try this tonight, except I may look at butterflying it differently, and I'm going to roast it slow instead, in the oven, I'll let you know

Your bacon wrapped goose sounds delicious marinated the way you did would give it outstanding flavor. I bet this would be terrific on moose.

We just made some goose wrapped in (maple) bacon for the superbowl..Didn't even marinate it and it was legit..Next time I'll try the marinade. Really important not to cook it over medium. Some of the over cooked pieces didn't taste nearly as good as the med/med rare pieces.
If I was a goose I would want to land in my decoys.
