bacon wrapped cream cheese duck/goose

we maranaid duck and goose in italian dressing over night (cut the geese/ducks into bite size peices) then we take bacon and cut the strips in half. place a peice of duck on the bacon, take a spoon and put a chunk of cream cheese on it and a slice of a jalapeno pepper and wrap that all up and put then on skewers and grill...bust duck you have ever had.

meat thermometer-when the duck/goose hits 140-145 its done. keep a spray bottle full of water handy when you grill bacon. you tend to get lots of flare ups. If no meat thermometer, grill on medium heat and when the bacon is cooked, the duck should be too.

yea we grill them as tornadochaser said you just have to grill them til they are done all grills are diffrent.

this is how we do all our duck...you are correct the best duck you will ever have...im just gettin hungry thinkin about it!! :D

you can also try marinating in dales steak marinade instead of the italian dressing! and when we pull them off the grill we place a slice of pepperjack cheese on them and let it melt! better than steak!

We do it the same, 'cept we fillet it into strips and roll the cheese and jalapeno up in the center, then wrap it with bacon and poke it with a toothpick.

I like it better with Dale's, too, quack' (not as sweet). Must be an Arkansas thang.
Goose huntin' is spec-tacular!

Add a little cilantro to the poppers. Adds an excellent flavor.

You can also substitute the "cream" cheese with actual cheese/ pepper jack slices/ which will also eliminate the jalepino step as well! Pretty much the same great results. :thumbsup:

Last batch I made was HOT. pepper jack cheese, slice of jalepeno, and the goose was marinaded in buffalo wild wings mango habenjero sauce. :mrgreen: I don't suggest that recipe unless cold beer is handy.

I do the same receipe (bacon,jalo,cream cheese,and a small slice of pineapple,duck/goose) Even my wife that does not like the jalo will eat them this way.Roll it all up in the bacon stick it with toothpick brush with teriyaki and grill over low heat untill you can't wait any longer . Keep it med/rare. :beer:
