Any recipe for goose meatball

Postby smallfeet » Wed Jun 08, 2011 10:41 am

I've been invited to a large bbq but I only have ground goose. Except for goose burgers, is there any recipe for goose meatballs? I just want to give the city folks a taste ...

With ground goose meat, I would maybe go with chilli. Easy and the longer you cook it the better it gets. Maybe pm jon magrath, he has a decent recipe for duck chilli?

Indeed I do, I also have a reciepe for goose meatballs. Let me put my son down for his nap and I'll post up the recipe. Give me about 2.5 hours.

Here is my goose meatball recipe:

Grind 7 pounds of goose breast with 2.5 pounds of the cheap fatty wal mart hamburger
Add 10oz. of italian bread crumbs
add 4 tablespoons mrs. dash garlic and herb seasoning
add 4 tablespoons of italian seasoning
add 4 eggs

Mix all this together really good. Then, you can start making the meat balls. I like mine to be about the size of pool balls, brown them on the griddle and then freeze if your not going to immediately. When it comes time to cook them, use your favorite sauce along with the meat balls in a crock pot for 4-6 hours.

4 lbs of goose to 1 lb of bacon ends and pieces, ground and mixed. 1 medium onion diced and mixed into the meat.. season to taste. make meat balls. (add your bread crumbs, egg, crackers, or other binder as needed just like any other meat ball recipe)
